Ingredients

  • ¼ cup peanut butter powder, such as PB2
  • 12 pitted Medjool dates (6 oz.)
  • 2 tablespoons chopped vegan dark chocolate or mini chocolate chips, such as Enjoy Life

Instructions

  1. In a small bowl stir together peanut butter powder and 3 tablespoons water. Transfer peanut butter to a resealable plastic sandwich bag and use scissors to snip off one of the bottom corners.
  2. Arrange dates on a plate and pipe a drizzle of the peanut butter over them. Sprinkle with chocolate. Store in an airtight container in the refrigerator up to 1 week.

  1. I make a version as “Pea-nutty Date Bark” and teach in a Plant-Based cooking class. We cut the dates in quarters, mash them and overlap the edges. (sticky side down, on parchment) then top with a thin layer of nut butter and melted Enjoy Life chocolate chips. Just a pinch of salt on top to counter the sweet. These are always a favorite. Can also add chopped nuts to the chocolate. Place in the freezer for a frozen delicious treat. 😉

    1. I used almond butter. The results are delicious. Give it a try.

  3. This seems like a lazy recipe. I have seen versions where the peanut butter is piped inside the date and it’s then dipped in melted chocolate.

  4. Sounds yummy! Can carob be used to substitute for the chocolate? Would the quantity be different? I love chocolate, but I have friends who can’t have it because it has caffeine and also I would make it for my dogs and chocolate Can be deadly to them!

    1. I made these with carob chips and they were nice.
