This comes from a Southern lady who grew up on Southern food who is wanting to change her sweet tea ways; not that I cooked the Southern fare. In fact, I’m a terrible cook. But seriously, I am trying to change my diet and lifestyle away from sugar and to fruits and veggies. So I look at these recipes and I might as well be reading a foreign language book: an African based chile, bulgar, date paste, coriander, food processor… I appreciate variety but I need simple. Not recipes with ingredients I will never use again or don’t even know what to do with them. I know the purpose of this segment was Mediterranean but you asked for Comments and after reading through the recipes this was my take away.
To those who say these ingredients are available in any grocery store, I wish that were true. I live in the Midwest, in an urban suburb, and even I can’t find some of these ingredients in my local grocery stores. I am a seasoned cook and have tried many ethnic recipes. Luckily, I have Asian, Middle Eastern, Indian, and even a global foods store I can drive to. But those who live in more rural area, and especially in the SAD areas of most of the Midwest would have to order ingredients online.
If you’re new to vegan cooking, here’s what I would suggest:
Get a couple of different grains like quinoa, bulgar, couscous, or farro from your local grocer. They usually have those. They’ll also have lentils, brown and red.
Basmati rice is nice, but not needed; brown rice is fine.
They should have kalamata olives and capers in jars too, and hopefully tahini.
If no tahini, ground until creamy some cashews and add a drop of sesame oil.
And, try a pre-made sauce or two. Yes, they have preservatives but will at least give you an idea if you will like the dish. If so, then you can hunt for the ingredients.
I’ve done this many times in the past and end up buying the ingredients to make the dishes from scratch and to use those ingredients in other dishes. I keep a list of possible ingredients that I might want to get and the name of the dish it goes in. When I get three dishes that use that ingredient, or if I’ve used it to create a phenomenal dish, I’ll hunt for it.

I agree, J! I would need to go to a Whole Foods or similar to find some of these ingredients. I don’t have the budget for that unless I can find several other recipes that use those same ingredients and eat them within the week. My local Publix is severely lacking in the produce department. They didn’t even have avocados or sweet potatoes last time I was there. Forget about Tahini and Harissa lol
Hi J Myers! I think that you will find, if you read the recipes again, that there are ingredients that are unfamiliar to you. All the ingredients the FOK’s recipes use, are found quite easily in most grocery stores. They are just new to you and if tried, could open up a world of new and exciting flavors for your palate! I hope you give it a try, because you may be pleasantly surprised.

Zoe R, it depends on where you live. In some small Southern towns, it’s hard to get even the things most people in bigger cities call ‘basics.’ Cornmeal, yes. Polenta, not a chance. Collards, yes. Anything else? Not very likely. Iceberg lettuce, yes. Arugula? What in the world is THAT? Romaine? Maybe…. 🙂
