Why do you write « Transport yourself to the rolling hillsides of rural France » ???? This dressing is not at all a French rural speciality ! I am French and believe me every one in France, rural or not, make this dressing, of course the non vegan : 3 table spoons of oil, one table spoon of vinagar and a small spoon of Dijon mustard, salt, pepper. You can add garlic, or onion or shallots.
