This easy Tropical Chia Pudding will brighten up any morning when you crave something cool and refreshing the minute you wake up. The flavors of banana, mango, and passionfruit make you feel like you’re on vacation every day.

Ingredients
- 1 cup mashed overripe banana (about 2 bananas)
- 2 cups unsweetened plant‑based milk
- ½ cup chia seeds
- ½ teaspoon pure vanilla extract
- 2 mangoes, peeled and diced (or substitute 1¾ cups or 300 grams frozen mango, thawed)
- 2 passionfruit (or substitute ¼ cup frozen passionfruit pulp, thawed)
- Toasted coconut flakes to serve (optional)
Instructions
- Combine the mashed banana, milk, chia seeds, and vanilla extract in a large bowl. Mix well to combine. Cover and chill in the refrigerator for 30 minutes, then mix again to ensure it is well combined.
- If using thawed frozen mango, blitz in a blender until a smooth, thick puree.
- Divide half the mango between six jars or containers. Top with roughly half the chia mixture. Repeat with the remaining mango and chia mixture to form two layers of each.
- Halve the passionfruit and scoop out the pulp. Add some to the top of each chia pudding, then chill for at least 3 hours, or up to three days. When you’re ready to eat, sprinkle on some toasted coconut flakes if using and enjoy!
