There’s something about the warmth and complexity of the spices in Moroccan cuisine that inspires me to create new dishes using them. This stew offers a heaping serving of black beans, chickpeas, and lentils, along with yellow-fleshed sweet potatoes that simmer in a fragrant, intoxicating broth infused with cinnamon, cumin, coriander, ginger, fennel, garlic. Individual servings can be finished with slices of dried roasted figs, a nice touch if serving to guests.

When Farm Sanctuary was founded in 1986, there was little awareness of the highly destructive effects of factory farming. I wanted to see for myself what was happening, so I spent years visiting farms, stockyards, and slaughterhouses, undercover, to document the conditions at these operations. What I found was living animals discarded like garbage, thrown into trash cans or heaped onto piles of dead animals. Sick, injured, and immobile animals were left to suffer for hours, even days, without receiving food, water, or veterinary care. The abuse I witnessed was appalling. We stepped in to rescue these individuals, and Farm Sanctuary’s vital shelter work began.

I am a 40-year-old male. In March, I was taken to a local emergency room with chest pain from a pulled muscle and then later learned I had high blood sugar. On April 5, after taking labs I met with my doctor and was advised that I had a number of disease processes taking place that if not addressed would change my life drastically. My A1C was 9.6 and my average blood glucose level was over 265. My triglycerides were 167, cholesterol was 204 and my LDL was 122. At the time my blood pressure was 138/87. I was suffering from chronic back pain, couldn’t sleep at night and could barely stay alert during the day.
