2Black Bean Burgers 570x299 Black Bean BurgersThis Mexican burger is inspired by Jeff Novick’s veggie burger line. It’s a delicious and healthy alternative to greasy beef burgers. Use your favorite salsa or you could also replace salsa with ketchup. If you enjoy the hotness, feel free to add a little bit of hot sauce. For a better hold, prepare the patties the day before and store in your refrigerator over night.

Lipitor655x344 Who Should Take Cholesterol lowering Statins? Everyone or No One?

Lipitor570x299 Who Should Take Cholesterol lowering Statins? Everyone or No One?Should cholesterol-lowering statins be added to our drinking water in order to prevent atherosclerosis, like fluoride is added to prevent tooth decay? Some medical doctors and scientists have recommended this public health measure because heart disease and strokes threaten the lives of more than half of all people following the Western diet. Apparently, even healthy people are now being told to take statins, with recommendations that over the age of 50, regardless of their health history, people should take these medications daily.

Spring Rolls

Spring Rolls 644x355 Spring Rolls

SpringRolls 570x299 Spring RollsSpring rolls are a popular appetizer in several Asian cuisines: Taiwanese, Chinese, Thai, Indonesian, and Vietnamese, just to name a few. The fillings often vary with the seasons, which is why you might see them referred to as both spring rolls and summer rolls. I’ve blended the flavors of Taiwanese, Vietnamese, and Thai spring rolls here to create the ultimate Asian-inspired appetizer.

The Myth of Complementary Protein

The Myth of Complementary Protein 570x299 The Myth of Complementary Protein

Recently, I was teaching a nutrition class and describing the adequacy of plant-based diets to meet human nutritional needs. A woman raised her hand and stated, “I’ve read that because plant foods don’t contain all the essential amino acids that humans need, to be healthy we must either eat animal protein or combine certain plant foods with others in order to ensure that we get complete proteins.”

SloppyLentilJoes 570x299 Sloppy Lentil JoesThis is a quick and easy meal that also reheats well for lunch the next day or two. Serve this stuffed into a whole-grain bun and eat with your hands, or ladle it over the buns (open-face style) and eat with a fork. I usually serve steamed kale with this dish and fresh corn, when in season.

WaterBlogPic655x344 Freshwater Abuse and Loss: Where Is It All Going?

WaterBlogPic570x299 Freshwater Abuse and Loss: Where Is It All Going?Along with climate change, perhaps the most pressing concern we have regarding sustaining our lives, and future life on earth, is our supply of fresh water. From 1941 to 2011 the world’s population has tripled, but freshwater consumption has quadrupled, which is predicted to leave forty percent of the world’s population facing severe water stress by the year 2020. One third of all counties in the lower United States (1,100 counties spanning fourteen states) will face water shortages by 2050, with more than 400 of them at “extremely high risk.” Continue reading

Angelia570x299 Angelina Jolie’s Double Mastectomy—People Are Desperate for ChangeI have no intention of criticizing the famous actress, Angelina Jolie, for her decision to have both breasts removed in an effort to improve her chances for a longer life. (National headlines on May 15, 2013.) I have treated nearly a thousand people with breast cancer over my 45-year career in medicine. From my experience, I can safely say that she has agonized over this decision. Continue reading

How a Plant-Based Lifestyle Helped Me Regain My Health and Youthfulness

Victoria 655x344 How a Plant Based Lifestyle Helped Me Regain My Health and Youthfulness

Victoria 570x299 How a Plant Based Lifestyle Helped Me Regain My Health and YouthfulnessFor most of my adult life, I battled health and weight issues. Since about 18 years old, I fluctuated in weight and clothing sizes, and it was ever so frustrating. I tried so many things, like long workouts in the gym, weight-loss pills, restricting carbs, and so on. I was doing anything possible to get those fifty pounds off, but the results were always unsatisfying. Each time I lost weight, I ended up gaining back more than I originally lost. I eventually cancelled my useless gym membership and settled for occasional evening strolls.
